History:
The counterweight trébuchet was an engineering marvel, capable of hurling boulders over 300 meters. Designed to demolish castle walls, it was the first siege engine to use a fulcrum-based mechanism to launch projectiles—surpassing the catapult in power, precision, and design.

One infamous variant, known as the “Bad Neighbor,” was reputed to trigger landslides to bring down city walls. The trébuchet’s design is even said to have influenced early clockwork and theoretical physics.

Such was its effectiveness that the trébuchet remained in use well into the 15th century, toppling fortifications alongside emerging artillery like the howitzer cannon.

Winemaking notes: 
100% free-run Pinot Noir, hand-picked and processed with care. This wine is unfined and polished-filtered, with natural and added sulfites for freshness and stability. No other additives, animal products, or residual sugar — just pure expression. Aged 18 months on the lees with American Medium+ toasted oak for depth and character. 

Tasting notes: 
Trébuchet is the delicate counterpart to our Howitzer pinot noir. These two wines, separated after birth, showcase how a simple deviation in the process can produce two distinct wines from a single fermentation. The Trébuchet is entirely free run wine meaning that it does not go through our grape press. Howitzer on the other hand is all of the wine that comes off the press which yields a heavier tannin profile and mouthfeel. Trébuchet on the other hand is a delicate, fruit forward, and more nuanced version of pinot noir that is sure to delight the senses.

Pinot Noir grapes, yeast*, nutrient*, sulfites. Aged on American oak
*Yeast and nutrients were used during fermentation and removed by natural settling and filtration.
